Ingredients (for 4 servings)
  • Smoked duck breast, sliced

  • Dried vermicelli noodles (beehoon)

    100g

  • Kadoya roasted sesame oil

    2 teaspoons

  • Medium carrots, peeled julienned

  • Coral lettuce, roughly chopped

  • Japanese cucumber, ribboned

  • Butter lettuce roughly chopped

  • Red chilli, finely chopped

    1

  • Fresh cilantro roughly chopped

  • Fresh mint leaves torn

  • 【Asian salad dressing】

  • Kadoya roasted sesame oil

    2 tablespoons

  • Fish sauce

    1 tablespoon

  • Juice of lime

    1 (about 3 tablespoons)

  • Maple syrup

    1 ½ tablespoon

  • Salt and black pepper to taste

Directions
  • Soak dried vermicelli noodles in warm water until softened, about 15 minutes.

  • Drain and toss with 2 teaspoons sesame oil to prevent clumping and drying out.

  • Toss together all the ingredients for the salad except smoked duck breast.

  • In a bowl whisk together all the ingredients of the salad dressing. Season with salt and black pepper to taste.

  • Serve smoked duck breast on top of vermicelli noodle salad with dressing on the side.
