Tuna and cucumber potato salad

Ingredients (for 4 servings)
  • Potatoes

    250g

  • Green onion

    5 cm length

  • Cucumber

    1/2

  • Kadoya roasted sesame oil

    2 tablespoons

  • Salt

    1/4 teaspoon

  • Canned tuna (in oil)

    2 tablespoons (including the oil)

  • Black pepper

    as needed

  • Additional canned tuna (in oil)

    as needed

Directions
Preparation
  • Peel the potatoes and cut them into 5-6mm thick slices, then rinse them 2-3 times with water.
  • Finely chop the green onions.
  • Slice the cucumber into 1-2mm thick rounds.
  • Place the potato slices in a microwave-safe dish and add water (not included in the ingredient list) to a depth of about 1 cm from the bottom of the dish.
    Cover loosely with plastic wrap and microwave at 600W for about 3 minutes.
    Stir to turn the potatoes over and microwave for another 2-3 minutes.
    If the potatoes are not fully cooked, continue to microwave in 1-minute increments, checking after each minute.

  • While the potatoes are still hot, roughly mash them with a fork and let them cool slightly.

  • While the potatoes are cooling, mix Kadoya roasted sesame oil and salt in a bowl.
    Add the finely chopped green onions and mix well.

  • Add the cucumber slices from step 2, canned tuna (in oil), and the mixture from step 3 to the mashed potatoes. Mix everything thoroughly.

  • Serve on a plate and optionally top with black pepper and more canned tuna (in oil).
