Zucchini & carrot & roasted feta salad with sesame and herbs de Provence

Ingredients (for 4 servings)
  • Feta cheese

    200g

  • Zucchinis

    2 medium size

  • Carrots

    2 medium size

  • Kadoya roasted sesame oil

    1 tablespoon

  • Provence herbs

    1 teaspoon

  • Salt and pepper

  • ▼For the sauce

  • Apple cider vinegar

    6 tablespoons

  • Olive oil

    3 tablespoons

  • Kadoya roasted sesame oil

    1 tablespoon

  • Wholegrain mustard

    1 teaspoon

Directions
  • Preheat oven to 180°c fan oven.

  • Mix the Provence herbs with the sesame oil.

  • Coat the drained feta cheese well with this mixture. Place in a baking dish.

  • Place in the oven for 30 minutes. Wash the zucchinis, cut off the ends and cut into tagliatelle using a vegetable peeler.

  • Peel the carrots and cut into tagliatelle, also using a vegetable peeler.

  • Mix all sauce ingredients with a fork.

  • Place the zucchini and carrot tagliatelle in a salad bowl, drizzle with the sauce and mix well. Set aside in a refrigerator.

  • Remove the feta from the oven, place on a plate and chill until ready to serve.

  • To serve: divide the vegetables between 4 bowls and sprinkle with Provence herbs. Dice the feta and place on top of the salad.
